You'll need: 1 kilogram (32
oz.) all purpose flour 75 grams currants |

Well the currants and raisins in tepid water.
Drain currants and raisins and mix with pieces of apple, if used. Resolve the yeast in the milk.
Put flour in large bowl and make a well in the center. Add butter and sugar, then add milk and beat until smooth. Last, stir in lemon juice, raisin mixture and salt. Cover the bowl with a piece of cloth, like a kitchen towel, preferably put it in front of the heating system of your house and let it rise for an hour. (You can also place it in your bed, covering it up with your blankets, but you better make sure your bowl is big enough!)
Stir once more before starting and drop by medium spoonfulls into hot oil (190 degrees celcius) until browned. Drain. Serve on platter, with powder suger on top.
